2019 Cabernet Sauvignon
color: deep ruby
aroma: cassis, pomagranite, cedar
palate: tart blackberry, menthol, black cherry skins
pairing: New York strip with black garlic butter
aging: 2021- 2027+
Grown at Cool Ridge Vineyard, harvested on October 15, 2019. Fermented with native yeast in stainless steel on the skins for two weeks, drained to once used French oak barrels and aged there for 18 months. Racked to tank the first week of August & bottled August 10, 2021.
